—delicious, sure, but not always what you're in the mood for when it's sweltering outside.
Between the fanciness and the richness, cold soups never earned a place in my summer cooking repertoire until I visited Krakow and tasted my first bowl of chłodnik . This summer cousin ofwasn't puréed into utter smoothness. It wasn't a bland beige color. Instead, it was a refreshing pool of delicious things that I just wanted to splash in: earthy beets, shredded cucumber and sour pickle, savory scallion and dill.
And last but not least, the chłodnik utterly shamed its cold-soup rivals with its sheer beauty. That vibrant hot-pink color just begs to be Instagrammed.And although we tend to think of beets as a winter root vegetable, they're actually at their peak from June to October. So you're much more likely to see them at the market, their delicious greens still attached, this time of year.
