It's hard to miss the white Giovanni's Shrimp Truck tagged with graffiti along 56-505 Kamehameha Highway in Kahuku on the North Shore of Oahu.Drive the two-lane highway of Oahu’s North Shore and you’ll discover a foodie phenomenon. From Haleiwa to Kahuku, this coastline — most known for its big waves — is also famous for its garlic shrimp.
Giovanni's Shrimp Truck is famous for its shrimp scampi plate lunch served with a dozen shrimp marinated in olive oil, chopped garlic and lemon butter along with two scoops of white rice.“When we say hot and spicy, we mean hot and spicy,” Nitsche says. “The shrimp’s actually cooked and covered in our blend of hot sauce that’s got a couple secret peppers.”
Much of Giovanni's success is attributed to word of mouth. Visitors line up to order from the original North Shore shrimp food truck every day.“I was out here in the Army during that time and I used to bring people that would come visit me to Giovanni’s because everybody liked it,” Nitsche says of the years prior to owning it. Originally from Pennsylvania, Nitsche was stationed at Schofield Barracks Army Base and got out in 1996, around the time the truck was put up for sale.
“My nephew is involved with it,” Nitsche says. “My son and my brother’s daughter are still a little too young, but hopefully we will be around another 20 years and they can take it over.”
