How easy it is now for the rest of us to get our soul-warming fix, not just from ramen but any of the quick-cooking Japanese noodles readily available at most supermarkets. Yagihashi, of Chicago's Slurping Turtle restaurant, walked us through the main types.Check out the international foods aisle of your grocery store; most stock a decent selection of Japanese noodles. Along with the usual ramen, dried soba, and udon, I found several types of cooked, shelf-stable udon at mine.
And they all cook in a matter of minutes—a mere minute or two for fresh and fresh-frozen noodles, a few more minutes for dried.
