The popular taco trend is now on a bun — here's where to get one
, a Hoboken institution that famously baked Frank Sinatra’s favorite bread and is now an Italian restaurant recently introduced a new menu item: The birria burger.
The restaurant is known for its delicious dry-aged rib-eye burger. But how do they make it a birria burger? Like a, it is served with a bowl of consommé — a hearty, beefy soup for dunking. Cooked in that soup is a heaping portion of tender chopped short rib that is placed atop the burger with Oaxaca cheese .
“What brought to the burger in terms of his own culture is just really special,” owner Joe Castelo said. “It’s all about neighborhood flavors and bringing those all together. That’s why that burger is special, you’re bringing the tradition of our oven together with the cultural traditions of our chef. It’s just a very unique burger.”
Combining two wildly popular food trends — novelty burgers and birria tacos — seems like a slam dunk .Antique nails the burger base, with a tender and juicy patty, which I ordered cooked medium in hopes of maintaining structure as I dunked it into the broth. And that consommé is some of the best I have had in New Jersey; well-seasoned without too much salt.
“It’s a staple at this point,” Castelo said. “We would upset a lot of people if we took it off the menu.”
