Your rental probably doesn’t come with good olive oil.
Every summer for the past several years, my family has rented a house on Cape Cod for a two-week stay. My husband and I, along with our two children, look forward to the trip all year, talking about the bike rides we'll take, the ponds we'll swim in, the ice cream we'll eat , and, most of all, the food we're going to cook.
But many vacation rentals are poorly equipped when it comes to key pantry ingredients. Usually the only items in the kitchen cabinets are the dregs of whatever was left behind by the people who rented the house before you: a half-used bottle of ketchup, a box of Saltines, some packets of Splenda . So rather than top those beautiful vine-ripened tomatoes with a drizzle of rancid olive oil, we always pack a few ingredients we know we'll need.
