a way for me to give Texans and readers in general the vocabulary for what they already know. Most Texans are familiar with these elements. We eat them, we get excited by them, we get repulsed by them, but I hope that giving readers this history and giving them context, will encourage them to seek out the food for themselves, because there’s no better place to be eating Mexican food in America than in Texas right now.

Ralat says he’s stunned and grateful for the James Beard recognition, and that it would not have been possible to do this kind of work without the great support of his editors. “They deserve as much credit or more, because they have to deal with me,” he says with a laugh.
