, in Sugar Land, is a chai franchise that began in Dubai, where co-owner Zeeshan Shaikh was born and raised. The café, facilitating the long-standing tradition of people sitting and chatting over carefully brewed cups of chai, is usually open from 11 a.m. to 11 p.m. on weekdays and 10 p.m. to 1 a.m. on weekends.

This year’s business hours reflect an adjustment for Shaikh, who found last year that customers arrived just after the cafe closed to ask for food ahead of the next day’s fast. Shaikh's team often kept the kitchen open to accommodate them. He says he has a diverse staff with industry experience, so that Muslim employees can leave to pray and return before a surge in customers. He can protect the time of his observing Muslim employees and consider the needs of his core employee team.

Inam Moghul, owner of Bismillah Café, a nearly 30-year-old family-owned restaurant on Hillcroft Avenue, said that means donating iftar boxes to local mosques and holding a Ramadan event to foster community.
