” Burt says. He describes the visual style of Parkside on Fifth as “Manhattan meets the Garden District.”
“We’ll have small plates, shareable, and a lot of really snack-y things,” Stacey says. “A few dips, a few salads, a few entrees. ... On Friday and Saturday at 10 o’clock, the menu will probably switch over to predominantly burgers and fries. Once people really start drinking, they want some good, greasy fat, and that will be a component.”
He’s determined to dispel any negative notions that might linger about the Parkside building, and make sure people realize the former Parkside Cafe is gone for good. But they were wrong. Burt says the Parkside building has its own unique identity -- one he forged in 1999 when he bought a condemned structure, made major renovations and founded a business there called Parkside Home & Garden -- and that identity remains paramount.
“I think you have to close one chapter to open another,” Burt says. “There’s no way to embrace this, and not do it wholeheartedly. I wanted to make sure I do it right.”
