The watery tomatoes and cucumbers available in many American supermarkets can be too bland for making delicious, Mediterranean-style chopped salads. Here's a trick to coax out flavor.
12 ounces ripe tomatoes, cored and cut into 6 to 8 wedgesKosher salt and ground black pepper3 tablespoons red wine vinegar1 medium garlic clove, finely gratedIn a colander set in a large bowl, toss together the tomatoes, cucumber and ½ teaspoon salt; let stand for 10 minutes. Meanwhile, in a small bowl, stir together the onion, chili, vinegar and ¼ teaspoon salt; let stand for 10 minutes.
Transfer the tomatoes and cucumbers to a serving bowl, discarding their liquid, then sprinkle with the feta. Using tongs, lift the onion and chili out of the vinegar mixture, squeezing gently and allowing the vinegar to drain back into the bowl, then scatter them over the tomatoes and cucumber; reserve the vinegar. Sprinkle the capers over the salad.
To the reserved vinegar, add the oil, garlic, a pinch of salt and and ¼ teaspoon pepper, then whisk to combine. Drizzle the dressing over the salad and sprinkle with parsley.
