Johnson says they’re already scouting locations for another Hub in North Texas, possibly again in Collin County.The most upscale part of The Hub is upstairs, at a pun-intended “elevated food” spot called Republic. It’s still casual, with a roof but no walls. A mix of comfy patio furniture and traditional chairs with tables can seat about 250 people. Johnson plans to close it off for private parties occasionally, or to offer it as VIP seating if they book a bigger act on the stage.
Menu items at Republic include Texas-sized loaded tater tots, fish and chips, a falafel slider and truffle fries.Crave Roadside Sliders sells small burgers topped with pimento cheese, brisket, bacon and the like. It also sells “carnival food” such as foot-long corn dogs, a chicken tender on a stick, and a PBJ — very kid-friendly, says Seve Delgado, the director of food and beverage.
