Adan credits the late owner, Rafael Salazar, for teaching him how to properly prepare the al pastor trompo — the distinctive vertical rotisserie used to cook the stacked and marinated sliced pork. “He taught me to cut directly from the top,” Adan wrote, describing how best to slice the meat off with a huge knife. “It’s about the preparation time, the dedication and the pleasure of making them.”
Owner Adan Lucido credits the late owner of Taqueria Los Barrilitos, Rafael Salazar, for teaching him how to make great al pastor tacos. Lucido’s location is enormous, with a vast seating area. But the restaurant’s focal point is the gleaming red trompo positioned up front. Place your order and the cooks will carefully slice the marinated pork off in miraculously thin slices, before heaping it onto steamy corn tortillas. Each dark-red piece of pork has a crispy caramelized edge from the fire, while remaining shockingly juicy in the middle.
The restaurant serves other kinds of tacos, including carne asada and chorizo, not to mention dishes like quesadillas and burritos. But when a place has al pastor this good, I find it hard to order anything else. Had Lucido’s new location been open, there’s no question that it would have made my list of the best tacos in Chicago.
