Sazerac from Abigail Gullo, the bartender at Loa in New Orleans, and you get history in a glass. “Each ingredient tells a story about this city,” said Ms. Gullo. “There’s a dash of bitters concocted by a Creole refugee; French Cognac or brandy—Nola was a French colony first; rye whiskey for the American spirit, plus Louisiana cane sugar and an absinthe rinse.”
In 2008, the state legislature decreed the Sazerac the city’s official drink, but who invented it is much disputed. One story credits apothecary Antoine Amédée Peychaud, who in 1938 mixed Sazerac de Forge & Fils Cognac with a herbal concoction today sold as Peychaud’s Bitters. Another posits Thomas H. Handy, whose 1850s-era Sazerac Coffee House reportedly served one.
