The team behind the Mediterranean restaurant Ladino have opened a temporary smashburger pop-up called Henbit in the Bottling Department food hall at Pearl.
The restaurant specializes in smashburgers assembled from well-seared beef patties that are pressed thin on the griddle to provide oodles of caramelization and crunchy bits around the edges.
Henbit prepares those burgers with an eye on Texas ingredients including beef from the Floresville-based Peeler Farms and produce from other Texas-based farms. The restaurant claims the majority of its ingredients comes from small, family-operated farms in the state. Henbit's flagship offering is the Henbit Burger, which features two patties stacked on a tender milk bun with American cheese, shiitake aioli, pickles, tomato, onions and lettuce. The restaurant also serves a Veggie"Chicken" Sandwich made with a plant-based chicken substitute, a kale and avocado salad, crispy sweet potatoes and french fries seasoned with rosemary and garlic, among other items. A breakfast menu will be coming soon as well.
