Once a landscape designer, now Ron Paprocki is the pastry chef of Gotham Bar and Grill and heads their chocolate program.
Ron Paprocki did not grow up wanting to be a pastry chef. “It was more like one big beautiful accident,” he says. Raised in Rochester, New York he worked for ten years as a landscape designer. That career seemed to make sense. After renting homes for many years his parents bought five acres of land, which gave him great training. “It was sprawling. There were woods, a creek and three acres of farmable land,” says Paprocki.
His life changed when he was 29-years-old and met his first wife who was from Germany. She wanted to return home to get her teaching degree. “I quit my job, sold the house, and we moved to Germany,” Paprocki explains. “I thought, why not? It would be an adventure.” When Paprocki moved back to New York, he worked for Financier Patisserie and Sascha Bakery/Restaurant. Ultimately he joined the opening team of Gordon Ramsay at the London. While there he was nominated for a StarChefs Rising Stars Award which celebrates up-and-coming chefs and culinary professionals. He won the award and his career transformed. “I soon had brands reaching out to me to be an ambassador,” he says.
