Daddy Duncan’s food truck brings creative barbecue to historic Katy

Because this was one of the main depots on the line, the city that grew around it became known as “Katy.”Perhaps the most meaningful symbol of this city’s history is a collection of massive rice silos and dryers located just across Interstate 10 from Katy Mills mall. Additionally, his grandparents, Clark and Nancy, owned a burger joint on Tidwell Road that also sold barbecue. He learned classic Texas barbecue techniques there growing up, and still owns a pit his grandfather built for him.
Duncan’s oxtails are pecan wood-smoked on the pit for 3-4 hours, transferred to a pan and covered in a Dr Pepper-based braising liquid, and then the pan is placed back on the pit and cooked overnight. They are some of the best smoked oxtails in all of Houston.
