Texas' culinary heritage takes center stage in a new gourmet picnic for two from one of San Antonio's most celebrated chefs.debuted the to-go option at his restaurant Landrace in the Thompson San Antonio – Riverwalk hotel last week. The Box’d Lunch includes a pair of chicken salad sandwiches, cookies and potato chips for $50. That price tag reflects McHugh's attention to detail and commitment to showcasing the best of Texas' native ingredients.
The fire-roasted chicken salad sandwiches are cooked over mesquite, which imparts a distinct smoky taste of Texas throughout each bite. McHugh folds that rich poultry with celery, grapes, paprika and mustard along with plenty of fresh herbs all tucked between two slices of freshly baked whole wheat or white bread. The accompanying blue cheese potato chips are flavored with cheese from the Blanco-based OroBianco Italian Creamery, which specializes in products made from water buffalo milk.
Mesquite makes another appearance in the dessert. The brown butter chocolate chip cookies incorporate mesquite flour in the dough. Mesquite flour is milled from the tree's seed pods, and has a slightly sweet flavor and distinct woodsy aroma with notes of nuts and vanilla.
