1 cup gluten-free old-fashioned rolled oats Preheat oven to 375 degrees F. Line a 9×5” loaf pan with parchment paper and set aside.In a medium bowl, beat the egg. Add milk, Greek yogurt, applesauce, honey and oats. Stir to combine.Transfer dough to the prepared loaf pan and shape into a loaf. Sprinkle on additional oats and place in preheated oven to bake for 30-45 minutes or until a toothpick inserted into the center comes out clean.
For additional browning on the outside of the loaf, set the oven to broil and bake the bread for an additional 5 minutes or until browned to your liking. Remove bread from loaf plan and place on a cooling rack to cool completely before slicing and serving.Using different gluten free flours, yogurts or milks may change the consistency and how the liquid is absorbed. The batter should be sticky but hold together. If additional moisture is needed, stir in extra milk until the right consistency is reached.
To make this recipe dairy-free, you may use almond milk and coconut yogurt or your favorite dairy-free alternatives.Maple syrup may be used in place of honey.Yield: 18
