, the famous Bushwick pizzeria that recently opened its fifth location in downtown’s Post Houston food hall. So I suppose I shouldn’t have been surprised that at two weeks old, it is operating with a limited menu.
Kate Krader, a food writer for Bloomberg and a trusted palate, had the night before posted Instagram photos of a Famous Original and a Speckenwolf pie at the Bushwick pizzeria. Suddenly I had to have them. When I returned, about 8 minutes later, my pizzas awaited me. I carried the boxes out to my car and opened them up on the hood, in the early evening sun, for inspection purposes.
And that crust! Chewy and stretchy and unrepentantly blackened, it tasted of just enough fermenty tang and salt. I admired the slight droop at the tip as I hoisted the thin wedge for a better look, and the way the rest of the thin-bottomed slice held up as I ate.
