A flavorful and complex cocktail is only a minute away if you have a bottle of this tonic syrup on hand. Prickly pear cactus is the dominating flavor, rounded out by citrus peel, cinchona bark, lemongrass and other heady aromatics. The tonic also includes a shot of quinine, imparting a distinctive bitter flavor.
When it comes to highly addictive condiments, this stuff should be considered a controlled substance. Sweet, tart and bright with the flavor of prickly pear cactus, this jam derives most of its heat from the tiny chile pequíns that can be found growing in many backyards in San Antonio. Named the official State Native Pepper of Texas in 1997, chile pequíns are rarely found in grocery stores, making this product one of the few ways to enjoy a true taste of the state.
San Antonio knows its hot sauce, and this bottle proves it. Unlike most of the simple chile-and-vinegar concoctions found on restaurant and home tables across the city, this sauce is dark, earthy, smoky and mysterious. Ripe ancho chiles and tangy tamarind do most of the heavy lifting here, with the smoky morita chiles and sweet raisins providing depth and body.
